Ingredients:
1. Cooking spray
2. Wheat bran or oat- 2 tbsp, Soy flour- 1 tbsp-mix together
3. Soy flour- 1 cup
4. Sugar substitute (e.g. Sugar Free) ½ cup
5. Eggs- 2
6. Baking powder- 1 tsp
7. Blueberries- ½ cup
8. Club soda- 1/3 cup

Direction:
• At 375 degree F preheat the oven.
• Spray vegetable cooking oil at a 6 cup muffin tray.
• Evenly spread the soy flour & wheat bran mixture inside the cups (it will resist sticking).
• Now take a large sized bowl & pour all the remaining ingredients, excepting the blueberries.
• Blend all the ingredients properly & then add the blueberries.
• Pour the batter in the muffin cups.
• For almost 25-30 minutes bake in the center rack of the baking oven (till they turn golden brown in colour).
• Take it off from the baking oven & allow it to cool.
• Place in the refrigerator & serve with cream cheese.
• You can serve at room temperature or hot with butter.
